The Golden Hour Plate
There’s a particular time in the evening—around 6:45 p.m. on a summer night—when the sunlight dips low, everything smells like jasmine and charcoal, and dinner should be this: clean, elemental, and touched by flame. That’s what this dish is. A return to basics, but only after seasoning those basics with everything summer in California does best.
I make this dinner when I want something fast but thoughtful, filling but not heavy, and beautiful enough to eat outside with a glass of something chilled. We start with chicken, kissed with garlic, citrus, and a touch of smoked paprika—basic pantry magic—and throw it on a hot grill until the edges char. That’s your anchor.

Next up, a salad that’s summer on a plate: charred corn shaved right off the cob, ripe avocado, chopped scallions, lime juice, a touch of olive oil. It’s creamy and crunchy and bright. You could eat this whole bowl solo, and I often do the next day if there’s any left. (There usually isn’t.)
Finally, I add a handful of blistered cherry tomatoes—just flash-seared in a dry cast-iron pan until they split and sweeten. Their acidity balances the creamy avocado, and their juiciness acts like a bonus dressing.
What makes this dish sing is its simplicity and contrast: heat and cool, soft and crisp, smoky and sharp. It feels like something you’d eat barefoot, leaning against a railing, watching the sky change.
Ingredient Substitutions
- Chicken: Boneless skin-on thighs or bone-in drumsticks also work—just adjust grill time.
- Corn: Frozen grilled corn can substitute in a pinch—thaw and char in a hot pan.
- Avocado: Try diced mango for a sweeter, tropical twist.
- Scallions: Swap with chives or finely diced red onion.
- Lime: Lemon juice can stand in, though it’s a touch more acidic.
- Cherry Tomatoes: Grape tomatoes or chopped Roma work if blistered quickly in a hot pan.
